Meatballs

Prep time: 5 minutes
Cooking time: 15 minutes + cooling
Makes: 5 balls

Ingredients:

¼ clove garlic (optional)
½ cup, finely diced meat (e.g. chicken breast fillet, veal or lamb) 
¼ cup plain mashed potato 
1 scoop EleCare® Unflavoured (or EleCare® LCP) per serve
Gluten free breadcrumbs
Chopped chives (optional)

Method:

  1. Heat a small amount of oil in a small saucepan. Add garlic and meat and stir over the heat until meat changes colour and juices have evaporated.
  2. Add to mashed potato; mix well. Allow to cool.
  3. Mix in EleCare® (and chives if preferred).
  4. Roll into small balls. Roll in breadcrumbs and serve.
